Great wines are created by the interplay between soil, location, climate and people. Soil research experts have found that Château Haut-Bailly has one of the finest terroirs in the Pessac-Léognan.
The wines have always been good, but in recent years they have increased in quality even more. Haut-Bailly is known for its softness and silky texture. The wine has incredible potential of refined tannins and softly sweet, complex fruit nuances.
The vineyard is managed according to strict traditions and chemical weed killers are never used. Spraying is carefully limited, the soil is plowed and weeded with hoes, and the grapes are picked entirely by hand. Alcoholic fermentation lasts eight to ten days and is followed by maceration. This process takes about three weeks during which time the wine is never overheated. In this way a perfectly balanced wine is achieved.
